What do you do when you really don't feel like cooking but still what a healthy on plan meal? Make this super quick Hoisin Vegetable Noodle Stir Fry

Sometimes, even I don't fancy spending ages in the kitchen cooking up a meal and so I love to have a few go to quick meals that I can literally throw together in minutes, are still on plan, have my ⅓ veg, while still tasting yummy.

ThisQuick Hoisin Vegetable Noodle Stir Fry - is one of those types of dishes. In fact stir fries are a perfect quick meal, whatever you are adding to them.

I'll often add a protein like chicken, pork, beef or shrimp, but occasionally I just fancy a meat free dish.

A great tip when you do your grocery shopping if you know you have a busy week ahead, is to grab some quick stir fry mix bags. The last thing you want is to have to stand a chop up a load of veg when you are hungry and what your dinner like 30 minutes ago.

Here in Canada we get these handy bag of slaw, which is basically just shredded vegetables like cabbage, kale, Brussels, broccoli stalks, carrots etc. One of those pretty much always goes in my cart on a weekly basic. As they are perfect for some quick speed food. I even love them raw in a salad.

As well as those, there are also handy bags of stir fry medley, with broccoli stalks, broccoli, mange tout and carrot which is the exact one I use for this. I love a slight crunch in my stir fries and broccoli is perfect for that.

Of course if you can't get bags of handy veg like this, set aside a less busy day in the week, to get some chopped up and store in a ziplock bag or similar in your fridge, then it is ready to grab when you need it. It is always better to be prepared, as you know what is likely to happen if not, you'll grab the nearest phone and order take out instead.

For the sauce it really is super easy. A good splash of soy sauce and some hoisin sauce is all that's needed. You could spend longer chopping up some ginger, garlic and making your own sauce, but for times like this when you want something quick, this is perfect.

All that's left to do is stir through some cooked noodles and scatter with some chopped spring onion (it looks pretty, trust me) and a pinch of sesame seeds (don't go too heavy on that pinch though, as a teeny pinch.

For those that are gluten free, you can get some pretty decent gluten free noodles nowadays, so replace the egg noodles with a gluten free noodle of your choice. You will also be pleased to know that Tamari is a gluten free soy sauce and there are also some gluten free Hoisin Sauces out there, if you can't get your hands on any though, swap the hoisin sauce for a pinch of Chinese five spice, garlic powder, ginger and some honey and it will be a perfect replacement for this QuickHoisin Vegetable Noodle Stir Fry - Okay it's not quite Hoisin but it still tastes great.

Quick Hoisin Vegetable Noodle Stir Fry

Ingredients

  • 125g (4.5oz) of dry egg noodles
  • approx 5 cups of stir fry veg (broccoli, mange tout, carrot, cabbage)
  • 2 tbs of Hoisin Sauce
  • 3 tbs of soy sauce
  • 2 tbs water
  • black pepper
  • 2 spring onions, finely sliced
  • pinch of sesame seeds
  • spray oil

Instructions

  1. Cook noodles according to package instructions. Spray with oil and toss with 1 tbs of soy sauce.
  2. Spray a wok or large frying pan with spray oil, add the veg and stir fry for approx 2 minutes.
  3. Add the remaining soy sauce, hoisin and water and continue to stir fry for 1-2 mins.
  4. Mix in the noodles. Sprinkle with black pepper, spring onion and a pinch of sesame seeds.
  5. Serve and enjoy
